The world’s most accomplished chefs all have one thing in common — they have mastered the basics. They know how to care for their knives, identify flavours, expose the qualities of vegetables, select cuts of meat, prepare the essential sauces and plate everything with exquisite attention to detail.

The Kitchen Skills series was created to help you develop your fundamental techniques and skills. From the NAIT professional kitchen facility you will gain the basic knowledge and know-how to cook with confidence.

The classes include lecture, demonstration and hands-on application of the skills. You will practice all you learn so you can bring your new skills home with you!

Put on your apron, it’s time to get in the kitchen! Knives, equipment and food are provided for classroom use.

Important: Students are asked to bring an apron, food containers, and grocery bags to take home their tasty creations. The recommended footwear for these courses should be closed toe, non-slip leather shoes. Do not wear loose clothing and jewelry.

Admission Requirements

These courses are designed to run in a consecutive series of 5, with a prerequisite required to proceed to the next level.

This series of classes is devoted to the skills considered to be the foundation in the art and science of culinary preparation. They are for professionals who wish to quantify or hone their skills, the individual wishing to launch or explore a career in food preparation and the serious home or hobby chef.
